Easy Cheesy Zucchini Casserole

Ingredients:
4 medium zucchinis, sliced
1 cup shredded cheddar cheese
1/2 cup grated Parmesan cheese
1/2 cup sour cream
1/4 cup milk
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
Salt and pepper to taste
1 cup breadcrumbs
2 tablespoons butter, melted
1 tablespoon fresh parsley, chopped (for garnish)

Directions:
Preheat Oven: Preheat your oven to 350°F (175°C). Grease a 9×13-inch casserole dish with butter or cooking spray.
Prepare Zucchini: Slice the zucchinis into thin rounds. You can also lightly salt the zucchini slices and let them sit for 10 minutes to remove excess moisture. Pat them dry with paper towels.
Make Casserole Mixture: In a large mixing bowl, combine the shredded cheddar cheese, Parmesan cheese, sour cream, milk, garlic powder, onion powder, salt, and pepper. Stir until smooth and combined.
Assemble Casserole: Layer the zucchini slices in the bottom of the prepared casserole dish. Pour the cheese mixture evenly over the zucchini.
Top with Breadcrumbs: In a small bowl, mix the breadcrumbs with melted butter. Sprinkle the breadcrumb mixture evenly over the casserole.
Bake: Place the casserole in the oven and bake for 25-30 minutes, or until the cheese is melted and bubbly and the breadcrumbs are golden brown.
Garnish & Serve: Remove from the oven and garnish with chopped parsley before serving.
