Easy Cheesy Taco Pasta

Ingredients:
1 pound ground beef
1 packet (1 ounce) taco seasoning
1 can (14.5 ounces) diced tomatoes
1 cup beef broth
8 ounces pasta (penne, rotini, or any shape you prefer)
1 cup shredded cheddar cheese
1 cup shredded Monterey Jack cheese
1/2 cup sour cream
1 cup frozen corn (optional)
1 cup black beans, drained and rinsed (optional)
Chopped fresh cilantro or green onions for garnish (optional)

Directions:
Cook the Pasta:
In a large pot of salted boiling water, cook the pasta according to package instructions until al dente. Drain and set aside.
Cook the Beef:
While the pasta is cooking, heat a large skillet over medium heat.
Add the ground beef and cook until browned, breaking it up with a spoon as it cooks. Drain any excess fat.
Add Seasonings and Vegetables:
Add the taco seasoning to the browned beef and mix well.
Stir in the diced tomatoes and beef broth. Bring to a simmer and let cook for 5 minutes.
Combine Ingredients:
Add the cooked pasta to the skillet and stir to combine with the beef mixture.
If using, add the frozen corn and black beans and mix well. Let cook for another 2-3 minutes, until everything is heated through.
Add Cheese and Sour Cream:
Reduce heat to low and stir in the shredded cheddar and Monterey Jack cheeses until melted and the sauce is creamy.
Remove from heat and stir in the sour cream until well combined.
Serve and Garnish:
Spoon the cheesy taco pasta into bowls or onto plates.
Garnish with chopped fresh cilantro or green onions if desired.
