Dorito Taco Salad
Ingredients:
1 lb ground beef
1 packet (1 oz) taco seasoning mix
1/2 cup water
1 head romaine lettuce, chopped
1 cup cherry tomatoes, halved
1 cup shredded cheddar cheese
1/2 cup red onion, diced
1 can (15 oz) black beans, drained and rinsed
1 cup corn kernels (fresh, frozen, or canned)
2 cups crushed Dorito chips
1/2 cup sour cream
1/2 cup salsa
1 avocado, diced (optional)
Chopped cilantro (optional, for garnish)
Instructions:
Cook the Ground Beef:
In a large skillet over medium heat, cook the ground beef until browned, breaking it apart as it cooks. Drain excess fat if necessary.
Stir in the taco seasoning mix and water. Simmer for 5 minutes, or until the seasoning is well incorporated and the mixture has thickened. Set aside to cool.
Prepare the Salad Base:
In a large salad bowl, combine the chopped romaine lettuce, cherry tomatoes, shredded cheddar cheese, diced red onion, black beans, and corn.
Add the Beef:
Add the cooked ground beef mixture to the salad and toss to combine.
Add the Doritos:
Just before serving, gently fold in the crushed Dorito chips to maintain their crunch.
Make the Dressing:
In a small bowl, mix together the sour cream and salsa. Adjust the seasoning with salt and pepper to taste.
Serve:
Serve the salad with the salsa-sour cream dressing drizzled on top. Optionally, add diced avocado and chopped cilantro as garnishes.
