Dorito Casserole

Ingredients:
1 lb ground beef
1 packet taco seasoning mix
1 can (10 oz) Rotel diced tomatoes and green chilies
1 can (10 oz) cream of chicken soup
1 cup sour cream
2 cups shredded Mexican cheese blend, divided
1 large bag (11 oz) Nacho Cheese Doritos, crushed (reserve 1/4 cup for topping)
Optional toppings: diced tomatoes, green onions, black olives, jalapeños, fresh cilantro

Directions:
Preheat Oven: Preheat your oven to 350°F (175°C). Grease a 9×13-inch baking dish and set aside.
Cook Ground Beef: In a skillet over medium heat, cook the ground beef until browned. Drain excess grease, then add the taco seasoning mix and follow package instructions (usually adding water and simmering until thickened).
Combine Ingredients: In a large mixing bowl, combine the cooked beef, Rotel, cream of chicken soup, sour cream, and 1 cup of shredded cheese. Mix until well combined.
Layer the Casserole: Spread a layer of crushed Doritos across the bottom of the prepared baking dish. Spoon half of the beef mixture over the Doritos, then add another layer of Doritos on top. Repeat until you have used all of the beef mixture, finishing with a layer of Doritos.
Top with Cheese: Sprinkle the remaining 1 cup of shredded cheese over the top layer of Doritos. Add the reserved crushed Doritos for extra crunch.
Bake: Place the casserole in the preheated oven and bake for 20-25 minutes, or until the cheese is melted and bubbly.
Serve with Toppings: Remove from oven and let it cool for a few minutes. Top with optional toppings like diced tomatoes, green onions, black olives, jalapeños, or fresh cilantro.
