🛒 Ingredients
2 large eggs 🥚🥚 (separated)

3 tbsp white sugar

½ cup all-purpose flour

½ tsp baking powder

¼ cup milk 🥛

½ tsp vanilla extract

Separate eggs: Separate the egg yolks and egg whites into two different bowls.

Whisk yolks & sugar: In the bowl with the yolks, add sugar and whisk until pale and fluffy.

Add dry & wet ingredients: Sift in flour and baking powder, then add milk and vanilla extract. Mix until smooth.

Beat egg whites: In the other bowl, beat egg whites until stiff peaks form.

Fold whites into yolks: Gently fold the beaten egg whites into the yolk mixture, being careful not to deflate the batter.

Prepare pan: Heat a non-stick pan over low heat and brush lightly with butter.

Cook pancakes: Spoon dollops of batter onto the pan without overcrowding.

Cover & cook: Cover the pan with a lid and cook for about 4 minutes, until bubbles form on top.

Flip & finish: Carefully flip the pancakes and cook for another 3–4 minutes until cooked through.

Serve: Serve immediately with your favorite toppings—maple syrup, fresh fruit, whipped cream, or whatever you love!
