Dirty Rice
Ingredients:
1 lb ground beef or pork sausage
1 lb chicken livers, finely chopped (optional)
1 small onion, diced
1 green bell pepper, diced
2 celery stalks, diced
3 cloves garlic, minced
1 ½ cups long-grain white rice
3 cups chicken broth
1 tsp Cajun seasoning
1 tsp smoked paprika
½ tsp thyme
¼ tsp cayenne pepper (optional)
Salt and pepper to taste
2 tbsp olive oil
2 green onions, chopped (for garnish)
Fresh parsley, chopped (for garnish)
Directions:
Cook the Meat: In a large skillet, heat olive oil over medium heat. Add ground beef or pork sausage and chicken livers (if using). Cook until browned, breaking the meat into crumbles. Drain excess fat and set aside.
Sauté Vegetables: In the same skillet, add diced onion, bell pepper, celery, and garlic. Cook for about 5-7 minutes until the vegetables soften.
Combine and Season: Add the cooked meat back to the skillet with the vegetables. Stir in the rice, Cajun seasoning, smoked paprika, thyme, cayenne (if using), salt, and pepper. Cook for 2-3 minutes, stirring occasionally.
Simmer: Pour in the chicken broth, bring to a boil, then reduce the heat to low. Cover the skillet and let the rice simmer for 18-20 minutes, or until the rice is tender and the liquid is absorbed.
Fluff and Garnish: Once done, fluff the rice with a fork and sprinkle chopped green onions and parsley on top.
