Dill Pickle Sloppy Joe Grilled Cheese

Ingredients:
1 pound ground beef (or ground turkey for a lighter option)
1 tablespoon olive oil
1 small onion, diced
1 small green bell pepper, diced
2 cloves garlic, minced
1 teaspoon Worcestershire sauce
1/2 cup ketchup
1/4 cup dill pickle relish (adjust to taste)
1 teaspoon yellow mustard
Salt and black pepper, to taste
8 slices of bread (sourdough or your choice)
8 slices of cheddar cheese (or cheese of your choice)
Butter, for grilling
Fresh dill, for garnish (optional)

Directions:
Cook the Beef:
In a large skillet over medium heat, add the olive oil. Once hot, add the ground beef and break it apart with a spatula. Cook until browned, about 5-7 minutes. Drain any excess grease.
Sauté the Vegetables:
Add the diced onion and green bell pepper to the skillet with the beef. Cook for about 5 minutes, or until the vegetables are softened. Add minced garlic and cook for an additional minute.
Add the Sauce:
Stir in the Worcestershire sauce, ketchup, dill pickle relish, and yellow mustard. Season with salt and black pepper to taste. Let the mixture simmer for about 5 minutes, allowing the flavors to meld. Remove from heat.
Assemble the Grilled Cheese:
Preheat a griddle or a large skillet over medium heat. Take two slices of bread and place a slice of cheddar cheese on one side of each slice. Spoon a generous amount of the sloppy joe mixture over one slice, then top with another slice of cheddar cheese. Place the other slice of bread on top to form a sandwich.
Grill the Sandwich:
Spread a thin layer of butter on the outside of the sandwich. Place the sandwich on the preheated griddle and grill for 3-4 minutes on each side, or until golden brown and the cheese is melted. Repeat with remaining sandwiches.
Serve:
Remove the grilled cheese sandwiches from the skillet and let them cool for a minute. Cut in half and serve warm, garnished with fresh dill if desired.
