Delightful Raspberry Cream Cheese Bites
Ingredients:
For the Cream Cheese Filling:
8 oz (225 g) cream cheese, softened
1/4 cup granulated sugar
1 teaspoon vanilla extract
1 egg
For the Raspberry Topping:
1 cup fresh or frozen raspberries (thawed if frozen)
1/4 cup granulated sugar
1 tablespoon lemon juice
1 tablespoon cornstarch
For the Crust:
1 cup all-purpose flour
1/4 cup granulated sugar
1/4 teaspoon salt
1/2 cup unsalted butter, cold and cubed
Optional Garnish:
Powdered sugar for dusting
Fresh mint leaves
Directions:
Prepare the Raspberry Topping:
In a small saucepan, combine the raspberries, granulated sugar, lemon juice, and cornstarch.
Cook over medium heat, stirring frequently, until the mixture starts to thicken and bubble, about 5-7 minutes.
Remove from heat and let it cool completely.
Make the Crust:
Preheat your oven to 350°F (175°C). Line a mini muffin tin with paper liners or lightly grease it.
In a medium bowl, mix the flour, granulated sugar, and salt.
Cut the cold, cubed butter into the flour mixture using a pastry cutter or your fingers until the mixture resembles coarse crumbs.
Press about 1 tablespoon of the mixture into the bottom of each muffin cup to form the crust. Use the back of a spoon to press it down firmly.
Prepare the Cream Cheese Filling:
In a medium bowl, beat the softened cream cheese until smooth.
Add the granulated sugar and vanilla extract, and beat until combined.
Add the egg and beat until the mixture is smooth and well combined.
Assemble the Bites:
Spoon about 1 tablespoon of the cream cheese filling over the crust in each muffin cup.
Add a small spoonful of the raspberry topping on top of the cream cheese filling.
Bake:
Bake in the preheated oven for 15-20 minutes, or until the cream cheese filling is set and the edges of the crust are golden brown.
Let the bites cool completely in the tin before removing.
Garnish (Optional):
Dust with powdered sugar and garnish with fresh mint leaves before serving.
