Delightful Bananas Foster Cobbler
Ingredients:
For the Bananas Foster:
4 ripe bananas, sliced
1/4 cup unsalted butter
1/2 cup packed brown sugar
1/4 cup dark rum (or substitute with additional vanilla extract)
1/2 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
1 teaspoon vanilla extract
For the Cobbler:
1 1/2 cups all-purpose flour
1/4 cup granulated sugar
2 teaspoons baking powder
1/2 teaspoon salt
1/2 cup unsalted butter, cold and cut into small pieces
3/4 cup whole milk
1 large egg
For Serving (Optional):
Vanilla ice cream or whipped cream
Directions:
Prepare the Bananas Foster:
In a large skillet over medium heat, melt the butter.
Stir in the brown sugar and cook until it begins to dissolve and bubble.
Add the sliced bananas, cinnamon, nutmeg, and vanilla extract. Stir gently and cook for about 2-3 minutes until the bananas are coated and slightly softened.
Remove from heat and carefully add the rum. If using, ignite the rum to flambe the mixture, allowing the flames to subside. (Be cautious and ensure your surroundings are safe.) Alternatively, let it cook for an additional minute to burn off the alcohol.
Set aside.
Prepare the Cobbler Batter:
Preheat your oven to 375°F (190°C).
In a large bowl, whisk together the flour, sugar, baking powder, and salt.
Cut in the cold butter using a pastry cutter or your fingers until the mixture resembles coarse crumbs.
Stir in the milk and egg until just combined.
Assemble and Bake:
Transfer the Bananas Foster mixture to a 9×9-inch baking dish or similar.
Spoon the cobbler batter over the bananas, spreading it out as evenly as possible.
Bake in the preheated oven for 30-35 minutes, or until the top is golden brown and a toothpick inserted into the center of the cobbler comes out clean.
Serve:
Allow the cobbler to cool slightly before serving.
Serve warm with a scoop of vanilla ice cream or a dollop of whipped cream, if desired.
