👩🍳 Instructions
1. Prepare the Burger Filling
-
In a bowl, mix ground beef, crumbled bacon, salt, and pepper.
-
Divide the mixture into 6 equal portions and shape into small patties, slightly smaller than the cheese slices.
-
Place a slice of cheese on each patty (or wrap a cheese stick in beef), pressing lightly to secure.
-
Insert a wooden skewer through each patty.
2. Make the Cornmeal Batter
-
In a large bowl, whisk together cornmeal, flour, sugar, baking powder, and salt.
-
In another bowl, whisk milk, eggs, and melted butter.
-
Combine wet and dry ingredients until smooth and slightly thick.
3. Heat the Oil
-
Fill a deep fryer or large pot with vegetable oil (about 2–3 inches deep).
-
Heat to 350°F (175°C).
4. Coat and Fry
-
Pour batter into a tall glass or deep container (makes dipping easier).
-
Dip each burger patty on a stick into the batter, coating completely.
-
Carefully lower into hot oil and fry for 3–5 minutes or until golden brown and cooked through.
-
Remove with a slotted spoon and drain on paper towels.
