Decadent Caramel Apple Cheesecake Bars

Ingredients:
Crust:
– 2 cups all-purpose flour
– 1/2 cup packed brown sugar
– 1 cup unsalted butter, softened
Cheesecake Layer:
– 3 (8 oz) packages cream cheese, softened
– 3/4 cup granulated sugar
– 3 large eggs
– 1 1/2 teaspoons vanilla extract
Apple Layer:
– 3 Granny Smith apples, peeled, cored, and finely chopped
– 1/2 teaspoon ground cinnamon
– 1/4 teaspoon ground nutmeg
Streusel Topping:
– 1 cup packed brown sugar
– 1 cup all-purpose flour
– 1/2 cup quick-cooking oats
– 1/2 cup unsalted butter, softened
Caramel Topping:
– 1/2 cup caramel sauce

Directions:
1. Preheat your oven to 350°F (175°C). Grease a 9×13 inch baking dish and set aside.
2. In a medium bowl, combine the flour and brown sugar. Cut in the butter with a pastry blender until the mixture is crumbly. Press into the prepared baking dish and bake for 15 minutes or until lightly browned.
3. While the crust is baking, beat the cream cheese and granulated sugar in a large bowl until smooth. Add the eggs, one at a time, and then the vanilla extract, beating until combined.
4. Pour the cheesecake mixture over the warm crust.
5. In a small bowl, mix the chopped apples, cinnamon, and nutmeg. Spoon the apple mixture evenly over the cheesecake layer.
6. In another bowl, combine the brown sugar, flour, quick-cooking oats, and butter until crumbly. Sprinkle the streusel topping evenly over the apples.
7. Bake for 40-45 minutes, or until the filling is set. Drizzle with caramel sauce and allow to cool completely before cutting into bars.
