Cucumber Sandwich
Ingredients:
8 slices of white or whole wheat bread
1 cucumber, thinly sliced
4 oz cream cheese, softened
2 tablespoons fresh dill, chopped
1 tablespoon fresh chives, chopped
1 tablespoon lemon juice
Salt and pepper to taste
Butter (for spreading on the bread, optional)
Directions:
In a small bowl, combine the softened cream cheese, chopped dill, chopped chives, lemon juice, salt, and pepper. Mix until well combined and smooth.
If desired, lightly butter one side of each slice of bread.
Spread a generous layer of the cream cheese mixture on one side of each slice of bread.
Arrange the cucumber slices evenly over half of the bread slices.
Top with the remaining slices of bread, cream cheese side down, to form sandwiches.
Cut the sandwiches into quarters or desired shapes, and serve immediately.
