Crunchy Southwestern Chicken Wrap
Ingredients:
2 cups cooked chicken, shredded or diced
1 cup black beans, rinsed and drained
1 cup corn (canned or frozen)
1 cup cherry tomatoes, halved
1/2 cup red onion, finely chopped
1 avocado, diced
1 cup shredded lettuce
1 cup shredded cheddar cheese
1/4 cup fresh cilantro, chopped
1/4 cup ranch dressing or Southwest dressing
1 tbsp lime juice
4 large flour tortillas
Salt and pepper to taste
1 cup tortilla chips, crushed (for crunch)
Directions:
Prepare the Chicken Mixture:
In a large bowl, combine the shredded chicken, black beans, corn, cherry tomatoes, red onion, avocado, lettuce, cheddar cheese, and cilantro.
Add Dressing:
Drizzle the ranch dressing and lime juice over the mixture. Season with salt and pepper to taste. Gently toss until all ingredients are well coated.
Assemble the Wraps:
Lay out a flour tortilla on a flat surface. Place a generous amount of the chicken mixture in the center of the tortilla. Sprinkle crushed tortilla chips over the top for added crunch.
Roll the Wrap:
Fold the sides of the tortilla inward, then roll it up tightly from the bottom to the top. Repeat with the remaining tortillas and filling.
Serve:
Slice each wrap in half and serve immediately, or wrap in foil or parchment paper for a portable meal. Enjoy with extra dressing or salsa on the side if desired.
