Ingredients:
1 cup unsalted butter, softened
1 cup granulated sugar
1/2 cup powdered sugar
2 large eggs
1 tablespoon vanilla extract
3 cups all-purpose flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1/2 cup mini chocolate chips (optional)
Frosting (optional):
1/2 cup unsalted butter, softened
2 cups powdered sugar
2 tablespoons heavy cream
1 teaspoon vanilla extract
Directions:
Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
In a large bowl, cream together the softened butter, granulated sugar, and powdered sugar until light and fluffy.
Beat in the eggs and vanilla extract until fully incorporated.
In a separate bowl, whisk together the flour, baking powder, baking soda, and salt.
Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Fold in the mini chocolate chips if using.
Scoop out large spoonfuls of dough and roll into balls. Place them on the prepared baking sheet, slightly flattening each cookie.
Bake for 9-11 minutes, or until the edges are lightly golden. Remove from the oven and let the cookies cool completely on a wire rack.
For the frosting, beat the softened butter, powdered sugar, heavy cream, and vanilla extract together until smooth and fluffy. Frost the cooled cookies if desired.
