Crockpot Pepper Steak Recipe

Ingredients:
2 pounds beef sirloin or flank steak, sliced into thin strips
2 bell peppers, sliced (use red, green, or yellow)
1 medium onion, sliced
3 cloves garlic, minced
1/4 cup soy sauce
1/4 cup beef broth
1 tablespoon Worcestershire sauce
1 tablespoon cornstarch
1 tablespoon water
1 (14.5-ounce) can diced tomatoes, undrained
1 teaspoon sugar
Salt and pepper, to taste
Optional garnish: chopped fresh parsley or green onions

Instructions:
Prepare the ingredients:
Place the sliced steak, bell peppers, onion, and garlic into the crockpot.
Mix the sauce:
In a small bowl, combine the soy sauce, beef broth, Worcestershire sauce, diced tomatoes, sugar, salt, and pepper. Pour this mixture over the steak and vegetables in the crockpot.
Cook:
Cover and cook on low for 6-7 hours or high for 3-4 hours, until the beef is tender.
Thicken the sauce:
About 30 minutes before serving, mix the cornstarch and water together to form a slurry. Stir it into the crockpot to thicken the sauce.
Serve:
Once the sauce has thickened, serve the Crockpot Pepper Steak over rice or noodles, garnished with fresh parsley or green onions if desired.
