Crockpot Ham, Green Beans, and Potatoes

Ingredients:
1 lb ham, cubed (or use leftover ham)
1.5 lbs fresh green beans, trimmed
2 lbs potatoes, peeled and cubed
1 medium onion, chopped
4 cloves garlic, minced
4 cups chicken broth
1 tablespoon olive oil (optional)
Salt and pepper to taste
1 teaspoon dried thyme (optional)
1/2 teaspoon smoked paprika (optional)

Directions:
Prepare Ingredients:
Wash and trim the green beans.
Peel and cube the potatoes into bite-sized pieces.
If using leftover ham, cut it into cubes. If using a ham steak or other cuts, trim and cube the ham as well.
Layer Ingredients in Crockpot:
In the bottom of the crockpot, layer the cubed ham.
Add the green beans and cubed potatoes on top.
Sprinkle the chopped onion and minced garlic over the vegetables.
Add Seasonings and Broth:
Pour the chicken broth over the ingredients.
Drizzle olive oil if desired for added richness.
Season with salt, pepper, thyme, and smoked paprika to taste.
Cook:
Cover the crockpot and cook on Low for 6-7 hours or High for 3-4 hours, until the potatoes are tender and the flavors have melded together.
Serve:
Once done, stir gently to combine all the ingredients.
Serve warm, with a sprinkle of additional seasoning if desired.
Storage:
Store any leftovers in the refrigerator, covered, for up to 3 days.
