Crockpot Ham, Green Beans, and Potatoes

Ingredients:
1 lb. smoked ham, diced (or use ham hocks)
1 lb. fresh green beans, trimmed
6-8 medium potatoes, peeled and cut into chunks
1 medium onion, diced
3 cups chicken broth (or enough to cover the ingredients)
2 cloves garlic, minced
1 tsp salt (adjust to taste)
1/2 tsp black pepper
1/2 tsp smoked paprika (optional)
1/2 tsp dried thyme (optional)
2 tbsp butter

Directions:
Prepare Ingredients:
Start by preparing all the vegetables. Trim the ends off the green beans, peel and chop the potatoes into chunks, and dice the onion.
Layer the Crockpot:
Place the diced ham at the bottom of the crockpot.
Add the diced onion and minced garlic over the ham.
Layer the green beans on top of the ham and onions.
Finally, add the potato chunks on top.
Season and Add Broth:
Sprinkle salt, black pepper, smoked paprika, and dried thyme (if using) over the ingredients.
Pour in enough chicken broth to cover the ingredients. Add the butter on top.
Cook:
Cover the crockpot and cook on low for 6-7 hours or on high for 3-4 hours. The potatoes should be tender, and the green beans fully cooked.
Serve:
Once cooked, give everything a gentle stir to combine the flavors. Serve hot as a hearty main dish.
