Crockpot Chicken & Gravy
Ingredients:
4 boneless, skinless chicken breasts (or thighs, if preferred)
1 packet (1 oz) dry ranch seasoning mix
1 packet (1 oz) dry onion soup mix
1 can (10.5 oz) cream of chicken soup
1/2 cup chicken broth (or water)
1 tablespoon unsalted butter (optional, for extra richness)
Salt and pepper, to taste
Instructions:
Prepare the Chicken:
Place the chicken breasts (or thighs) at the bottom of your crockpot. You can use fresh or frozen chicken, though thawed chicken will cook more evenly.
Add Seasonings:
Sprinkle the ranch seasoning mix and onion soup mix evenly over the chicken.
Add Soup and Broth:
Pour the cream of chicken soup and chicken broth (or water) over the chicken and seasonings. Stir a little to combine, but the chicken can remain submerged.
Cook:
Cover and cook on low for 6-7 hours or high for 3-4 hours until the chicken is tender and easily shreds with a fork.
Shred the Chicken:
Once the chicken is fully cooked, remove it from the crockpot and shred it with two forks. Return the shredded chicken to the crockpot and stir it into the gravy.
Optional Additions:
If you like a richer gravy, you can stir in 1 tablespoon of butter at this point.
Adjust seasoning with salt and pepper to taste.
Serve:
Serve the chicken and gravy over mashed potatoes, rice, or pasta. It also pairs well with steamed vegetables or a simple side salad.
