Crockpot Chicken and Stuffing

Ingredients:
For the Chicken and Stuffing:
4 boneless, skinless chicken breasts (about 1.5 lbs)
1 can (10.5 oz) cream of chicken soup
1/2 cup chicken broth
1/2 cup sour cream
1 package (6 oz) stuffing mix (any flavor, such as herb or chicken)
1 cup shredded cheddar cheese (optional)
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
1/2 teaspoon dried thyme
Salt and pepper to taste
For Garnish (Optional):
Fresh parsley, chopped

Directions:
Prepare the Chicken:
Season the chicken breasts with salt, pepper, garlic powder, onion powder, and dried thyme.
Place the seasoned chicken breasts in the bottom of the slow cooker.
Prepare the Sauce:
In a medium bowl, combine the cream of chicken soup, chicken broth, and sour cream. Mix until smooth.
Pour the soup mixture over the chicken in the slow cooker.
Add the Stuffing:
Spread the stuffing mix evenly over the chicken and soup mixture. Do not stir; just let the stuffing sit on top.
Cook:
Cover and cook on low for 4-6 hours, or until the chicken is cooked through and the stuffing is tender.
If using, sprinkle the shredded cheddar cheese over the stuffing about 30 minutes before the end of cooking time and let it melt.

Serve:
Gently stir the chicken and stuffing together before serving.
Garnish with fresh parsley if desired.
