Crockpot Chicken and Stuffing

Ingredients:
4 boneless, skinless chicken breasts (or thighs)
1 box (6 oz) stuffing mix (such as Stove Top)
1 can (10.5 oz) cream of chicken soup
1/2 cup sour cream
1 cup chicken broth
1/2 cup water
1 teaspoon garlic powder
1 teaspoon onion powder
Salt and pepper, to taste
1 cup frozen mixed vegetables or fresh green beans (optional)
Fresh parsley, chopped (for garnish)

Instructions:
1. Prepare the Chicken:
Season the chicken breasts with garlic powder, onion powder, salt, and pepper on both sides. Place them in the bottom of the crockpot.
2. Add the Soup Mixture:
In a bowl, mix the cream of chicken soup, sour cream, and chicken broth until smooth. Pour this mixture over the chicken in the crockpot.
3. Add the Stuffing:
In a separate bowl, combine the stuffing mix with 1/2 cup of water. Toss to moisten the stuffing (you can adjust the water depending on how soft you want the stuffing). Spread the stuffing evenly over the soup-covered chicken.
4. Add Vegetables (Optional):
If you’re using vegetables, scatter the frozen mixed vegetables or fresh green beans on top of the stuffing.
5. Cook:
Cover and cook on Low for 4-6 hours or on High for 3-4 hours, until the chicken is cooked through and tender (internal temperature reaches 165°F/75°C).
6. Serve:
Once cooked, stir the casserole gently to mix the stuffing and chicken. Garnish with fresh parsley and serve hot.
