Crock Pot Taco Chili
Ingredients:
1 lb ground beef or ground turkey
1 small onion, diced
1 bell pepper (any color), diced
2 cloves garlic, minced
1 can (15 oz) black beans, drained and rinsed
1 can (15 oz) kidney beans, drained and rinsed
1 can (15 oz) corn, drained
1 can (15 oz) diced tomatoes, undrained
1 can (8 oz) tomato sauce
1 packet taco seasoning
1 packet ranch seasoning mix (optional, for added flavor)
1 cup water or beef broth (for added flavor)
Salt and pepper, to taste
Optional Toppings:
Shredded cheese
Sour cream
Sliced green onions
Chopped cilantro
Crushed tortilla chips or Fritos
Instructions:
Brown the Meat (Optional):
In a skillet over medium heat, brown the ground beef or turkey until fully cooked. Drain any excess fat. This step can be skipped for a more “dump-and-go” recipe, but browning adds flavor.
Add Ingredients to the Crock Pot:
In the crock pot, combine the cooked meat, diced onion, bell pepper, garlic, black beans, kidney beans, corn, diced tomatoes, tomato sauce, taco seasoning, ranch seasoning mix (if using), and water or broth.
Stir and Cook:
Stir everything together to combine well. Cover and cook on low for 6-8 hours or on high for 3-4 hours.
Serve:
Once done, give it a good stir. Serve the taco chili with your favorite toppings, like shredded cheese, sour cream, green onions, or crushed tortilla chips.
