Tender Crock Pot Pepper Steak
Ingredients:
1 1/2 lbs (680 g) beef sirloin, sliced into thin strips
2 tablespoons vegetable oil
1 large onion, sliced
2 bell peppers (red and green), sliced
4 cloves garlic, minced
1 can (14.5 oz) diced tomatoes
1/4 cup soy sauce
2 tablespoons Worcestershire sauce
2 tablespoons cornstarch
1/4 cup cold water
1 teaspoon dried oregano
1 teaspoon dried basil
1/2 teaspoon black pepper
Salt to taste
Cooked rice, for serving
Directions:
Heat vegetable oil in a skillet over medium-high heat. Add beef strips and cook until browned on all sides. Transfer to a crock pot.
In the same skillet, sauté onion, bell peppers, and garlic until they start to soften. Add to the crock pot.
Add diced tomatoes, soy sauce, Worcestershire sauce, oregano, basil, black pepper, and salt to the crock pot. Stir to combine.
Cover and cook on low for 6-7 hours or on high for 3-4 hours, until the beef is tender.
In the last 30 minutes of cooking, mix cornstarch with cold water to make a slurry. Stir the slurry into the crock pot to thicken the sauce.
Serve hot over cooked rice.
