  • 2 to 2½ lbs boneless, skinless chicken thighs

  • 1 cup unsweetened pineapple juice

  • ½ cup soy sauce (low sodium recommended)

  • ½ cup brown sugar, packed

  • ⅓ cup ketchup

  • 2 tablespoons rice vinegar or apple cider vinegar

  • 1 tablespoon fresh ginger, grated (or 1 tsp ground ginger)

  • 4 cloves garlic, minced

  • 1 teaspoon sesame oil (optional, but adds depth)

  • ½ teaspoon black pepper

  • 1 tablespoon cornstarch + 2 tablespoons water (optional, for thickening)

  1. Prepare the Sauce
    In a medium bowl, whisk together pineapple juice, soy sauce, brown sugar, ketchup, vinegar, ginger, garlic, sesame oil, and black pepper until well combined.

  2. Add to Crock Pot
    Place chicken thighs in the bottom of your slow cooker. Pour the sauce evenly over the chicken, making sure all pieces are coated.

  3. Slow Cook

    • Cook on LOW for 6–7 hours or

    • HIGH for 3–4 hours
      Chicken should be tender and easily shred with a fork.

  4. Optional: Thicken the Sauce
    Remove chicken and whisk cornstarch slurry into the sauce. Cover and cook on HIGH for 10–15 minutes until thickened. Return chicken to the sauce and stir.
