2 to 2½ lbs boneless, skinless chicken thighs

1 cup unsweetened pineapple juice

½ cup brown sugar, packed

⅓ cup ketchup

2 tablespoons rice vinegar or apple cider vinegar

1 tablespoon fresh ginger, grated (or 1 tsp ground ginger)

4 cloves garlic, minced

1 tablespoon cornstarch + 2 tablespoons water (optional, for thickening)

Prepare the Sauce
In a medium bowl, whisk together pineapple juice, soy sauce, brown sugar, ketchup, vinegar, ginger, garlic, sesame oil, and black pepper until well combined. -
Add to Crock Pot
Place chicken thighs in the bottom of your slow cooker. Pour the sauce evenly over the chicken, making sure all pieces are coated. -
Slow Cook

Cook on LOW for 6–7 hours or

HIGH for 3–4 hours
Chicken should be tender and easily shred with a fork.

Optional: Thicken the Sauce
Remove chicken and whisk cornstarch slurry into the sauce. Cover and cook on HIGH for 10–15 minutes until thickened. Return chicken to the sauce and stir.
