Creamy, cheesy, and full of cozy Italian flavors, this easy slow-cooker soup is a perfect weeknight meal. Just toss the ingredients in your Crock Pot and let it work its magic!

Ingredients:
1 lb boneless, skinless chicken breasts

4 cups chicken broth

1 can (15 oz) diced tomatoes (with juices)

1 teaspoon Italian seasoning

1 teaspoon garlic powder

1 teaspoon onion powder

1/2 teaspoon salt

1/4 teaspoon black pepper

1 cup pasta (small shapes like rotini or ditalini work great)

1/2 cup grated Parmesan cheese

4 oz cream cheese, softened and cubed

1/2 cup half-and-half or heavy cream

Fresh basil or parsley (optional for garnish)

Instructions:
Add to Crock Pot:
In your Crock Pot, add chicken breasts, chicken broth, diced tomatoes, Italian seasoning, garlic powder, onion powder, salt, and pepper.

Cook:
Cover and cook on low for 6–7 hours or high for 3–4 hours, until the chicken is cooked through and tender.

Shred Chicken:
Remove the chicken, shred it using two forks, and return it to the soup.

Add Pasta & Cheeses:
Stir in the uncooked pasta, Parmesan cheese, cream cheese, and half-and-half. Cover and cook on high for an additional 20–30 minutes, or until pasta is tender and cheese is melted.

Serve:
