Crock Pot Cheesy Chicken Tater Tot Casserole

Ingredients:
2 lbs boneless, skinless chicken breasts
1 cup shredded cheddar cheese
1 cup shredded mozzarella cheese
1 can (10.5 oz) cream of chicken soup
1 cup sour cream
1/2 cup milk
1 packet (1 oz) ranch seasoning mix
1 cup frozen peas and carrots (optional)
1 bag (32 oz) frozen tater tots
1/2 cup cooked bacon bits (optional)
Salt and pepper to taste
Fresh parsley for garnish (optional)

Directions:
Prepare the Chicken:
Season the chicken breasts with salt and pepper.
Place the chicken breasts in the bottom of the crock pot.
Make the Sauce:
In a medium bowl, combine the cream of chicken soup, sour cream, milk, and ranch seasoning mix. Stir until well combined.
Pour the mixture over the chicken in the crock pot.
Cook the Chicken:
Cover and cook on low for 6-7 hours or on high for 3-4 hours, until the chicken is fully cooked and tender.
Once cooked, shred the chicken with two forks and stir the mixture to combine.
Add the Vegetables:
If using, stir in the frozen peas and carrots.
Add the Tater Tots:
Arrange the tater tots evenly on top of the chicken mixture in the crock pot.
Cover and cook on high for an additional 1 hour, or until the tater tots are golden and crispy.
Add Cheese and Bacon (Optional):
If using bacon bits, sprinkle them on top of the tater tots.
Sprinkle the shredded cheddar and mozzarella cheese over the top.
Cover and cook for an additional 15-30 minutes, or until the cheese is melted and bubbly.
Garnish and Serve:
Garnish with fresh parsley if desired.
Serve hot and enjoy!

Store leftovers in an airtight container in the refrigerator for up to 3-4 days.
