Crispy Parmesan Crusted Chicken
Ingredients:
4 boneless, skinless chicken breasts
1 cup grated Parmesan cheese
1 cup breadcrumbs (preferably Panko for extra crunch)
1 teaspoon garlic powder
1 teaspoon paprika
½ teaspoon dried oregano
½ teaspoon dried thyme
Salt and pepper to taste
2 large eggs
2 tablespoons milk
½ cup all-purpose flour
3 tablespoons olive oil or vegetable oil (for frying)
Fresh parsley, chopped (for garnish)
Lemon wedges (for serving)
Directions:
Prepare the Chicken:
Preheat your oven to 375°F (190°C). Pound the chicken breasts to an even thickness, about ½ inch thick, to ensure they cook evenly.
Set Up Breading Stations:
In a shallow bowl, combine the flour, salt, and pepper.
In another shallow bowl, whisk together the eggs and milk.
In a third bowl, mix the Parmesan cheese, breadcrumbs, garlic powder, paprika, oregano, and thyme.
Bread the Chicken:
First, dredge each chicken breast in the flour mixture, shaking off any excess.
Next, dip the chicken into the egg mixture, ensuring it’s fully coated.
Finally, press the chicken firmly into the Parmesan breadcrumb mixture, coating both sides well.
Sear the Chicken:
In a large oven-safe skillet, heat the olive oil over medium-high heat. Add the breaded chicken breasts and cook for 3-4 minutes on each side, until golden brown and crispy.
Finish in the Oven:
Transfer the skillet to the preheated oven and bake for an additional 10-12 minutes, or until the chicken reaches an internal temperature of 165°F (74°C) and is cooked through.
Serve:
Garnish the crispy Parmesan chicken with freshly chopped parsley and serve with lemon wedges for an extra burst of flavor.
