They’re fast, fun, and guaranteed to disappear the second they hit the table.

Ingredients

For the Pickle Bombs

  • Dill pickle slices (thick-cut work best)

  • 8 oz cream cheese, softened

  • ½ cup shredded mozzarella or cheddar cheese

  • 1 tablespoon ranch seasoning mix

  • 1 cup all-purpose flour

  • 2 large eggs, beaten

  • 1½ cups seasoned breadcrumbs or panko

  • Oil, for frying

Optional Garnishes & Dips

  • Extra ranch dressing

  • Spicy mayo

  • Fresh chopped dill or parsley

Directions

1️⃣ Prep the Pickles

Pat pickle slices completely dry with paper towels. This helps everything stick and keeps the bombs crispy.

2️⃣ Make the Ranch Cheese Filling

In a bowl, mix cream cheese, shredded cheese, and ranch seasoning until smooth and well combined.

3️⃣ Assemble the Bombs

Spread a small spoonful of the cheese mixture onto one pickle slice and top with another pickle slice, forming a sandwich. Press gently to seal.

4️⃣ Bread the Bombs

Dredge each pickle sandwich in flour, then dip into beaten eggs, and coat fully with breadcrumbs.

5️⃣ Fry Until Golden

Heat oil to 350°F (175°C). Fry pickle bombs in batches for 2–3 minutes, turning once, until golden brown and crispy. Drain on paper towels.

6️⃣ Serve Hot

Serve immediately while the centers are melty and irresistible.
