Crispy Cheesy Zucchini Fritters

Ingredients:
– 4 cups grated zucchini
– 1 teaspoon salt
– 2 large eggs, beaten
– 1/2 cup all-purpose flour
– 1/2 cup grated Parmesan cheese
– 1/2 cup shredded mozzarella cheese
– 2 cloves garlic, minced
– 1/2 teaspoon baking powder
– 1/4 teaspoon black pepper
– 1/4 teaspoon red pepper flakes (optional)
– Olive oil, for frying

Directions:
1. Place the grated zucchini in a colander and sprinkle with salt. Let sit for 10 minutes, then squeeze out as much moisture as possible.
2. In a large bowl, combine the eggs, flour, Parmesan cheese, mozzarella cheese, garlic, baking powder, black pepper, and red pepper flakes.
3. Add the drained zucchini to the mixture and stir until well combined.
4. Heat olive oil in a large skillet over medium-high heat. Scoop tablespoons of the zucchini mixture into the skillet and flatten slightly.
5. Cook until golden brown, about 2-3 minutes per side. Remove and drain on paper towels.
