These Crispy Beef Cheese Chimichangas are everything comfort food should be—crispy on the outside, warm and cheesy on the inside, and packed with bold Tex-Mex flavor. Seasoned ground beef, sautéed onions, and gooey melted cheese are wrapped in flour tortillas and cooked until perfectly golden and crunchy.
Whether you fry, bake, or air fry them, these chimichangas are a guaranteed crowd-pleaser for family dinners, game day spreads, or whenever a craving hits.
Ingredients

1 lb ground beef

1 tablespoon olive oil

1 small onion, finely chopped

2 cloves garlic, minced

1 packet taco seasoning or 2 tablespoons homemade seasoning

½ cup water

1½ cups shredded cheddar or Mexican-blend cheese

6 large flour tortillas

Oil, for frying (or cooking spray for baking/air frying)
Directions
1️⃣ Cook the Beef Filling
Heat olive oil in a skillet over medium-high heat. Add ground beef and cook until browned, breaking it up as it cooks. Add chopped onion and cook for 3–4 minutes until softened. Stir in garlic and cook for 30 seconds.
Add taco seasoning and water. Simmer for 3–5 minutes until thickened. Remove from heat and let cool slightly.
2️⃣ Assemble the Chimichangas
Lay tortillas flat. Spoon beef mixture down the center of each tortilla and top with shredded cheese. Fold in the sides, then roll tightly into a burrito shape.
3️⃣ Cook Until Crispy
Frying Method:
Heat oil to 350°F (175°C). Fry chimichangas seam-side down for 2–3 minutes per side until golden brown. Drain on paper towels.
Baking Method:
Brush chimichangas with oil or spray lightly. Bake at 400°F (205°C) for 20–25 minutes, flipping halfway.
Air Fryer Method:
Air fry at 375°F (190°C) for 8–10 minutes, turning once.
