Ingredients:

Dough:
1 cup lukewarm milk
1 tbsp active dry yeast
⅓ cup granulated sugar
3 egg yolks
1 tsp vanilla extract
4 tbsp unsalted butter (softened)
4¼ cups all-purpose flour
1½ tsp salt
Vegetable oil (for frying)
Custard Filling:
½ cup granulated sugar
½ tsp salt
3 tbsp cornstarch
2 cups milk
4 egg yolks
2 tsp vanilla extract
2 tbsp unsalted butter
Brûlée Topping:
1 cup granulated sugar
¼ cup water
Directions:

Prepare the Dough:

Combine lukewarm milk, yeast, and 1 tsp of sugar in a large mixing bowl. Let sit for 10-15 minutes until foamy.
Add egg yolks and vanilla extract to the yeast mixture, stirring well.
In a stand mixer with a dough hook, combine flour, remaining sugar, butter, and salt.
Pour in the yeast mixture and mix on low speed until combined, then increase to medium speed and knead for 5-10 minutes until smooth and elastic.
Transfer dough to a greased bowl, cover, and let rise for 1-2 hours until doubled in size.
Make the Custard:

Whisk together sugar, salt, and cornstarch in a medium bowl.
Beat egg yolks until smooth, then mix in the dry ingredients until pale yellow and smooth.
Heat milk in a saucepan until it starts to simmer. Gradually temper the hot milk into the egg mixture.
Return the mixture to the saucepan and cook over medium heat, stirring constantly, until thickened.
Remove from heat, stir in vanilla extract and butter until smooth. Cover with plastic wrap touching the surface and refrigerate until cool.
Fry and Assemble the Donuts:

Punch down the risen dough and roll out to ½-inch thickness on a floured surface.
Cut out rounds using a 3-inch cookie cutter. Place on a prepared baking sheet, cover, and let rise for 20-30 minutes until puffed.
Heat vegetable oil in a deep fryer or large pot to 360°F (182°C). Fry donuts in batches for 1-2 minutes per side until golden brown. Drain on paper towels.
Fill a piping bag with custard and inject into each donut.
