🍝 Creamy Sun-Dried Tomato Shrimp with Spinach Pasta

🛒 Ingredients:
8 oz pasta (fettuccine or penne work great)
1 lb shrimp, peeled and deveined
2 tablespoons olive oil
3 cloves garlic, minced
1/2 teaspoon red pepper flakes (optional for heat)
1/3 cup sun-dried tomatoes in oil, chopped
2 cups fresh spinach
1 cup heavy cream
1/4 cup grated Parmesan cheese
Salt and pepper, to taste
Fresh basil or parsley for garnish (optional)

Cook the pasta according to package instructions until al dente. Drain and set aside.
Sauté the shrimp: In a large skillet, heat olive oil over medium heat. Add shrimp, season with salt and pepper, and cook 1-2 minutes per side until pink and opaque. Remove and set aside.
Make the sauce: In the same skillet, add a bit more oil if needed. Sauté garlic and red pepper flakes for 30 seconds. Stir in sun-dried tomatoes and cook for another minute.
Add cream and spinach: Pour in the heavy cream and bring to a gentle simmer. Stir in the spinach and cook until wilted.
Finish the sauce: Mix in Parmesan cheese and season with salt and pepper to taste. Return the shrimp to the skillet and stir to coat.
Combine: Add the cooked pasta to the sauce and toss until well coated.
Serve: Garnish with fresh herbs and more Parmesan if desired. Serve warm!
