Directions
1. Cook the Sausage
In a large pot or Dutch oven over medium heat, cook the Italian sausage until browned and fully cooked, breaking it into small pieces. Remove excess fat if necessary.
2. Sauté Onion and Garlic
Add the diced onion to the pot and cook for 3–4 minutes until translucent. Stir in minced garlic and cook for another 30 seconds until fragrant.
3. Add Broth and Seasoning
Pour in chicken broth and sprinkle in Italian seasoning, salt, and pepper. Stir to combine. Bring the mixture to a gentle boil.
4. Cook the Tortellini
Add the cheese tortellini to the simmering broth. Cook according to package instructions (usually 3–5 minutes for fresh tortellini or 5–7 minutes for frozen) until tender.
5. Add Cream
Reduce heat to low and stir in heavy cream. Allow the soup to simmer for 2–3 minutes, just until heated through. Do not boil after adding cream to prevent curdling.
6. Add Spinach
Stir in the fresh spinach and cook for 1–2 minutes, just until wilted. Taste and adjust seasoning with additional salt or pepper as needed.
7. Serve
