3 large eggs, room temperature

1 cup sour cream

1 teaspoon vanilla extract
For the Peach Topping:

2½ cups fresh or canned peaches, sliced (drained if canned)

½ cup peach preserves or peach pie filling

1 tablespoon lemon juice

1 teaspoon cornstarch (optional, for thickening)
Instructions
1. Prepare the Crust

Preheat oven to 325°F (165°C).

In a bowl, mix graham cracker crumbs, melted butter, and sugar until evenly combined.

Press mixture firmly into the bottom of a greased 9-inch springform pan.

Bake for 10 minutes, then set aside to cool.
2. Make the Cheesecake Filling

In a large bowl, beat cream cheese until smooth and creamy.
