Creamy Oyster Mushroom Pasta Recipe
A silky, garlicky pasta tossed with tender oyster mushrooms and a luscious cream sauce — ready in just 25 minutes. This cozy, comforting dish is perfect for a quick weeknight dinner, a date night at home, or when you want something indulgent yet easy to make. The natural umami of oyster mushrooms combined with creamy sauce makes it a standout vegetarian option, and it can easily be adapted to be dairy-free or vegan.
Why Oyster Mushrooms?
Oyster mushrooms are a star ingredient in this pasta because of their delicate texture and subtle, slightly sweet flavor. Unlike more common mushrooms, they have a meaty consistency that holds up well in a creamy sauce, giving your pasta a luxurious bite without being heavy. Their mild taste absorbs flavors beautifully, making them perfect for garlicky, herby dishes.
Ingredients (Serves 2)
-
6 oz (170g) pasta (fettuccine, linguine, or penne work best)
-
1 tbsp olive oil
-
1 tbsp butter (or extra olive oil for dairy-free)
-
1 clove garlic, minced
-
1 small shallot or onion, finely chopped
-
7–8 oz (200g) oyster mushrooms, torn into strips
-
1/2 cup cooking cream (or coconut cream for dairy-free)
-
1/4 cup grated parmesan (optional)
-
Salt & black pepper, to taste
-
1/4 tsp chili flakes (optional, for a hint of heat)
-
1 tbsp chopped parsley or thyme
-
Splash of pasta water (as needed for thinning the sauce)
Step-by-Step Instructions
1. Cook the pasta
Bring a large pot of salted water to a boil. Add your chosen pasta and cook until al dente, following the package instructions. Reserve about 1/4 cup of pasta water before draining — this starchy water will help make your sauce silky and smooth.
2. Sauté the mushrooms
While the pasta cooks, heat the olive oil and butter in a large skillet over medium-high heat. Add the chopped shallot or onion and sauté for 2–3 minutes until translucent. Add the minced garlic and cook for another 30 seconds until fragrant.
Next, add the oyster mushrooms. Cook for 5–6 minutes, stirring occasionally, until they are browned, tender, and slightly crispy at the edges. The mushrooms should have a deep, golden color and release a pleasant earthy aroma.
3. Build the creamy sauce
Reduce the heat to medium-low. Stir in the cream and mix until well combined. Add chili flakes, salt, and black pepper to taste. If using parmesan, stir it in now to melt and thicken the sauce slightly. Let the sauce simmer gently for 2–3 minutes.
If the sauce seems too thick, add a splash of reserved pasta water to loosen it. The goal is a smooth, velvety consistency that clings to each strand of pasta.
4. Combine pasta and sauce
Add the drained pasta directly into the skillet with the sauce and toss to coat evenly. Keep tossing for 1–2 minutes so the pasta absorbs some of the creamy mushroom sauce. Finish by sprinkling chopped parsley or thyme on top.
5. Serve
Plate the pasta into warm bowls. Garnish with extra herbs or a sprinkle of parmesan if desired. Serve immediately while hot for maximum flavor and creaminess.
Tips for Perfect Creamy Pasta
-
Don’t overcrowd the pan: If your skillet is too small, sauté mushrooms in batches. Overcrowding can make them steam instead of brown.
-
Use starchy pasta water: It helps emulsify the sauce and makes it stick beautifully to the pasta.
-
Add depth with umami: A dash of soy sauce or a sprinkle of nutritional yeast (for vegan) can enhance the mushroom flavor.
-
Garlic and shallots first: Cook these gently to release their aroma without burning, as burnt garlic can taste bitter.
-
Customize the cream: Coconut cream or cashew cream works well for dairy-free versions.
