📝 Ingredients
(Serves 4)
-
2 boneless, skinless chicken breasts (about 1 pound total)
-
1 teaspoon salt
-
½ teaspoon black pepper
-
2 tablespoons olive oil
-
2 tablespoons butter
-
8 ounces mushrooms, sliced (cremini or button)
-
3 cloves garlic, minced
-
½ cup chicken broth
-
1 cup heavy cream
-
½ teaspoon dried thyme or Italian seasoning
-
¼ cup grated Parmesan cheese (optional, but delicious)
-
Fresh parsley, for garnish
👩🍳 Directions
1. Prepare the Chicken
Pat chicken breasts dry and season both sides with salt and black pepper.
2. Sear the Chicken
Heat olive oil in a large skillet over medium-high heat. Add chicken and cook for 5–6 minutes per side, until golden brown and cooked through. Remove chicken from skillet and set aside.
3. Cook the Mushrooms
Reduce heat to medium. Add butter to the skillet, then mushrooms. Cook for 4–5 minutes until softened and lightly browned.
4. Add Garlic & Deglaze
Stir in garlic and cook for 30 seconds until fragrant. Pour in chicken broth, scraping up browned bits from the bottom of the pan.
