Ingredients:
2 large boneless, skinless chicken breasts, sliced into thin cutlets
Salt and black pepper, to taste
1 teaspoon garlic powder
2 tablespoons olive oil
3 cloves garlic, minced
1/2 cup sun-dried tomatoes, chopped (drained if packed in oil)
1 cup heavy cream
1 cup chicken broth
1/2 cup grated Parmesan cheese
1 teaspoon Italian seasoning
1/2 teaspoon crushed red pepper flakes (optional, for a little heat)
8 ounces pasta (such as fettuccine, penne, or spaghetti)
Fresh basil, chopped, for garnish

Instructions:
Cook the pasta:
In a large pot of boiling salted water, cook the pasta according to the package instructions until al dente. Drain and set aside.
Season the chicken:
Season the chicken cutlets with salt, pepper, and garlic powder on both sides.
Cook the chicken:
Heat the olive oil in a large skillet over medium-high heat. Add the seasoned chicken and cook for about 4-5 minutes per side, until golden and cooked through. Remove the chicken from the skillet and set aside.
Make the sauce:
In the same skillet, add the minced garlic and cook for 30 seconds until fragrant. Add the sun-dried tomatoes and cook for another 1-2 minutes.
Pour in the heavy cream and chicken broth, stirring to combine. Bring the mixture to a simmer, then stir in the Parmesan cheese, Italian seasoning, and crushed red pepper flakes. Simmer for 5-7 minutes, or until the sauce thickens slightly.
Combine chicken and pasta:
Slice the cooked chicken into strips and return it to the skillet. Add the cooked pasta, tossing to coat everything in the sauce. Cook for an additional 2-3 minutes to heat through.
Garnish and serve:
Garnish with fresh basil and extra Parmesan cheese before serving.
