Ingredients:
2 large cucumbers (sliced thinly)
1/2 red onion (thinly sliced)
1 cup sour cream (or Greek yogurt)
2 tbsp mayonnaise (optional, for extra creaminess)
1 tbsp white vinegar (or lemon juice)
1 tsp sugar (to taste)
1 tsp dill weed (fresh or dried)
Salt and pepper (to taste)

Instructions:
Prepare the cucumbers:
If desired, peel the cucumbers. Slice them thinly using a knife or a mandoline. Place the cucumber slices in a colander and sprinkle with salt. Let them sit for about 15-20 minutes to draw out excess moisture, then rinse and drain.
