Ingredients:
2 tablespoons olive oil
1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
Salt and pepper, to taste
1 teaspoon Italian seasoning
3 cloves garlic, minced
1/2 cup sun-dried tomatoes, chopped
2 cups heavy cream
1 cup chicken broth
1 cup grated Parmesan cheese
2 cups fresh baby spinach
1 pound pasta (such as fettuccine, penne, or your choice), cooked according to package instructions
Fresh basil or parsley, chopped (optional, for garnish)

Instructions:
Cook the Chicken:
Heat the olive oil in a large skillet over medium-high heat. Season the chicken pieces with salt, pepper, and Italian seasoning.
Add the chicken to the skillet and cook until golden brown and cooked through, about 5-7 minutes. Remove the chicken from the skillet and set aside.
Saute the Garlic and Sun-Dried Tomatoes:
In the same skillet, add the minced garlic and chopped sun-dried tomatoes. Cook for about 1-2 minutes, until fragrant.
Make the Creamy Sauce:
Pour in the heavy cream and chicken broth, stirring to combine. Bring to a simmer and cook for about 5 minutes, until the sauce starts to thicken.
Add the Parmesan and Spinach:
Stir in the grated Parmesan cheese until melted and well combined. Add the fresh spinach and cook until wilted, about 2-3 minutes.
Combine with Chicken and Pasta:
Return the cooked chicken to the skillet and stir to coat with the creamy sauce. Add the cooked pasta and toss to combine, ensuring the pasta is well coated with the sauce.
