Golden chicken, earthy mushrooms, and a velvety sherry cream sauce come together in this crave-worthy casserole-style dish. Perfect for a cozy night in!

🛒 Ingredients:
3 large chicken breasts, cut in half lengthwise (for 6 thinner pieces)

Salt & pepper, to taste

Flour, for dredging + 2 tablespoons

1 tablespoon olive oil

4 tablespoons butter (divided — 2 tbsp for cooking chicken, 2 tbsp for the sauce)

8 ounces cremini mushrooms, sliced

2 cloves garlic, minced

1/2 cup dry sherry

1 cup chicken broth

1 cup heavy cream

1 cup shredded mozzarella cheese

1/4 cup grated Parmesan cheese

1/2 teaspoon thyme (optional)

Chopped parsley (for garnish)

👩‍🍳 Instructions:
Prep & Dredge the Chicken
Season chicken with salt and pepper, then lightly dredge in flour.

Sear the Chicken
In a large oven-safe skillet or sauté pan, heat olive oil and 2 tbsp butter over medium-high heat. Sear chicken until golden brown on each side (about 3-4 mins per side). Remove and set aside.

Cook Mushrooms & Garlic
In the same pan, melt remaining 2 tbsp butter. Add mushrooms and cook until browned (about 5-6 minutes). Stir in garlic and cook another 30 seconds.

Make the Sauce
Sprinkle in 2 tablespoons flour and stir for 1 minute. Slowly pour in dry sherry while stirring to deglaze the pan. Add chicken broth and heavy cream. Bring to a gentle simmer until thickened (3–5 minutes).

Add Cheese
Stir in mozzarella, Parmesan, and thyme (if using). Let melt into the sauce.

Bake It
Return chicken to the pan, spoon sauce over it, and bake at 375°F (190°C) for 20–25 minutes, until bubbly and chicken is fully cooked (165°F internal temp).

Garnish & Serve
Sprinkle with fresh parsley and serve over mashed potatoes, rice, or pasta!

Swap sherry with white wine or extra broth if preferred.
