Creamed Spinach-Stuffed Salmon with Garlic Shrimp

Ingredients
For the Salmon

2 large salmon fillets, skin-on or off

Salt, pepper, and paprika, to taste

1 Tbsp olive oil

1 Tbsp lemon juice
For the Creamed Spinach Filling

1 cup chopped spinach (fresh or frozen, squeezed dry)

2 Tbsp cream cheese

2 Tbsp grated Parmesan cheese

1 garlic clove, minced
-
¼ tsp salt

¼ tsp black pepper
For the Garlic Shrimp

300 g raw shrimp, peeled and deveined

1 Tbsp butter
-
2 garlic cloves, minced

Salt, pepper, and paprika, to taste

1 tsp lemon juice

Fresh parsley, chopped
Directions

Preheat Oven
Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper. -
Prepare the Creamed Spinach Filling
In a small bowl, combine chopped spinach, cream cheese, Parmesan, minced garlic, salt, and pepper. Mix until creamy and well incorporated. -
Stuff the Salmon
Slice a pocket into each salmon fillet (about halfway through). Spoon the creamed spinach filling into the pocket evenly. Season the outside with salt, pepper, and paprika. Drizzle with olive oil and lemon juice. -
Bake the Salmon
Place stuffed salmon on the prepared baking sheet and bake for 15–18 minutes, or until salmon is cooked through and flakes easily with a fork. -
Cook the Garlic Shrimp
While salmon is baking, melt butter in a skillet over medium heat. Add garlic and sauté for 30 seconds. Add shrimp, season with salt, pepper, and paprika, and cook for 2–3 minutes per side until pink and opaque. Stir in lemon juice at the end. -
Serve
Plate the stuffed salmon and top with garlic shrimp. Garnish with fresh parsley if desired. Serve immediately.
