Creamed Potatoes and Peas

2 lbs red potatoes, boiled and halved
ΒΌ cup butter π§
3 tablespoons flour πΎ
1 Β½ teaspoons salt π§

1 Β½ cups milk π₯
1 cup evaporated milk π₯
10 oz. frozen peas π±

Prepare the potatoes:
Boil the red potatoes until fork-tender, then halve them and set them aside.
Make the creamy sauce:
In a large saucepan, melt the butter over medium heat. Once melted, whisk in the flour to form a roux. Continue to cook for about 1-2 minutes to remove the raw flour taste.
Add the milk:
Gradually add the milk and evaporated milk, whisking continuously until the mixture thickens. Season with salt and pepper.
Add the peas:
Stir in the frozen peas and cook for 2-3 minutes until the peas are heated through.
Combine with the potatoes:
Add the boiled red potatoes to the saucepan, gently stirring to coat them in the creamy sauce.
Simmer:
Let the potatoes and peas simmer in the sauce for an additional 5 minutes to allow the flavors to combine.
Serve:
Transfer to a serving dish and serve warm.
