Cream Cheese Lemonade Pie
Ingredients:
1 pre-made graham cracker pie crust (9-inch)
1 (8 oz) package cream cheese, softened
1 cup powdered sugar
1 cup lemonade concentrate, thawed
1 cup heavy cream
1 teaspoon vanilla extract
Lemon zest (from 1 lemon)
Lemon slices (for garnish, optional)
Directions:
Prepare the Filling:
In a large mixing bowl, beat the softened cream cheese until smooth using an electric mixer. Gradually add the powdered sugar and continue to mix until well combined.
Add the lemonade concentrate and beat until fully incorporated. The mixture should be smooth and creamy.
Whip the Cream:
In a separate bowl, whip the heavy cream and vanilla extract until stiff peaks form.
Combine:
Gently fold the whipped cream into the cream cheese and lemonade mixture until evenly combined. Be careful not to deflate the whipped cream.
Assemble the Pie:
Pour the filling into the pre-made graham cracker crust and spread it evenly.
Chill:
Refrigerate the pie for at least 4 hours, or until set.
Garnish and Serve:
Before serving, garnish with lemon zest and lemon slices if desired.
