Crazy Good Casserole
Ingredients:
2 cups cooked rotisserie chicken (or leftover cooked chicken), shredded
1 (10.5 oz) can cream of chicken soup
1 (10.5 oz) can cream of mushroom soup
1 cup sour cream
1 (8 oz) package frozen mixed vegetables (peas, carrots, corn)
1 cup shredded cheddar cheese
1/2 cup grated Parmesan cheese
2 cups cooked egg noodles or any pasta of your choice
1 tsp garlic powder
1/2 tsp onion powder
1/2 tsp dried thyme (optional)
Salt and pepper, to taste
1 cup crushed Ritz crackers or potato chips (for topping)
2 tbsp melted butter (for topping)
Instructions:
Preheat the Oven:
Preheat your oven to 350°F (175°C). Grease a 9×13-inch baking dish.
Prepare the Casserole Filling:
In a large mixing bowl, combine the shredded chicken, cream of chicken soup, cream of mushroom soup, sour cream, mixed vegetables, cheddar cheese, Parmesan cheese, cooked pasta, garlic powder, onion powder, thyme (if using), salt, and pepper. Stir everything together until well combined.
Assemble the Casserole:
Pour the mixture into the prepared baking dish and spread it out evenly.
Prepare the Topping:
In a small bowl, mix the crushed Ritz crackers or potato chips with the melted butter. Sprinkle the mixture evenly over the top of the casserole.
Bake:
Bake the casserole in the preheated oven for 25-30 minutes, or until the casserole is hot and bubbly and the topping is golden brown.
Serve:
Let the casserole cool for a few minutes before serving. Garnish with fresh parsley or extra cheese, if desired.
