Crazy Good Casserole
Ingredients:
1 lb ground beef
1/2 onion, diced
1/2 green bell pepper, diced
1 (10.5 oz) can cream of mushroom soup
1 (10.5 oz) can cream of chicken soup
1 cup sour cream
1 (10 oz) can diced tomatoes with green chilies (e.g., Rotel)
1 tsp garlic powder
Salt and pepper, to taste
3 cups cooked egg noodles
2 cups shredded cheddar cheese, divided
1/4 cup chopped green onions, for garnish (optional)
Directions:
Preheat the Oven:
Preheat your oven to 350°F (175°C) and grease a 9×13-inch baking dish.
Cook the Beef:
In a large skillet, cook the ground beef, onion, and bell pepper over medium heat until the beef is browned and the vegetables are soft. Drain any excess grease.
Combine Ingredients:
In the skillet with the cooked beef, add the cream of mushroom soup, cream of chicken soup, sour cream, diced tomatoes, garlic powder, salt, and pepper. Stir well until combined.
Add Noodles and Cheese:
Add the cooked egg noodles to the skillet and 1 cup of the shredded cheddar cheese. Mix until the noodles are well coated.
Transfer to Baking Dish:
Pour the mixture into the prepared baking dish and spread it evenly. Top with the remaining 1 cup of shredded cheddar cheese.
Bake:
Bake in the preheated oven for 25-30 minutes, or until the casserole is hot and bubbly, and the cheese on top is melted and slightly golden.
Garnish and Serve:
Remove from the oven and let it cool slightly. Garnish with chopped green onions if desired, and serve.
