Cracker Candy
Ingredients
1 sleeve (about 40) saltine crackers (or your favorite buttery crackers)
1 cup unsalted butter (2 sticks)
1 cup packed brown sugar
2 cups semi-sweet chocolate chips
1 cup chopped nuts (such as pecans or walnuts) (optional)
Sea salt (for sprinkling, optional)
Instructions:
Prepare the Base:
Preheat the Oven:
Preheat your oven to 350°F (175°C). Line a baking sheet with aluminum foil or parchment paper for easy removal.
Arrange Crackers:
Lay the saltine crackers in a single layer on the prepared baking sheet, covering the entire surface. You can break some crackers to fit if needed.
Make the Toffee:
Cook the Butter and Sugar:
In a saucepan over medium heat, melt the butter and brown sugar together, stirring constantly. Bring to a boil and let it boil for about 3 minutes without stirring. The mixture should be thick and bubbly.
Pour Over Crackers:
Immediately pour the hot butter and sugar mixture over the arranged crackers, spreading it evenly with a spatula to cover all the crackers.
Bake:
Bake in the Oven:
Bake in the preheated oven for 5-7 minutes, or until the toffee is bubbling and slightly darkened.
Add Chocolate:
Sprinkle Chocolate Chips:
Remove the baking sheet from the oven and immediately sprinkle the chocolate chips over the hot toffee. Let it sit for a few minutes until the chocolate chips are melted.
Spread the Chocolate:
Once melted, use a spatula to spread the chocolate evenly over the top.
Add Nuts (Optional):
Sprinkle with Nuts:
If using, sprinkle the chopped nuts over the chocolate layer and gently press them in.
Cool and Set:
Chill the Candy:
Allow the cracker candy to cool at room temperature for a few minutes, then transfer it to the refrigerator to chill for at least 30 minutes or until completely set.
Break into Pieces:
Once set, lift the candy out of the pan using the foil or parchment paper. Break it into pieces or cut into squares.
