Cracker Barrel Meatloaf (Copycat Recipe)
Ingredients:
1 1/2 lbs ground beef (80/20 or 85/15)
1 small onion, finely diced
1/2 cup bell peppers (green or red), finely diced
1 cup crushed Ritz crackers (about 20 crackers)
3/4 cup shredded sharp cheddar cheese
2 large eggs
1/4 cup milk
1/4 cup ketchup
1 tbsp Worcestershire sauce
1 tsp salt
1/2 tsp black pepper
1/2 tsp garlic powder
For the Topping:
1/2 cup ketchup
2 tbsp brown sugar
1 tbsp mustard (optional)
Directions:
Preheat the Oven:
Preheat your oven to 350°F (175°C). Lightly grease a loaf pan or line it with parchment paper.
Prepare the Meat Mixture:
In a large mixing bowl, combine the ground beef, diced onions, bell peppers, crushed Ritz crackers, shredded cheddar cheese, eggs, milk, ketchup, Worcestershire sauce, salt, pepper, and garlic powder. Mix everything thoroughly, but don’t overwork the meat.
Shape the Loaf:
Transfer the meat mixture to the prepared loaf pan. Gently press the mixture into the pan, shaping it into a loaf.
Mix the Topping:
In a small bowl, mix together the ketchup, brown sugar, and mustard (if using). Spread this mixture evenly over the top of the meatloaf.
Bake:
Bake the meatloaf in the preheated oven for 55-65 minutes, or until the internal temperature reaches 160°F (71°C) and the loaf is cooked through.
Rest:
Once cooked, remove the meatloaf from the oven and let it rest for about 10 minutes before slicing.
Serve:
Slice and serve the meatloaf alongside your favorite side dishes, such as mashed potatoes, green beans, or cornbread.
