Cracker Barrel Meatloaf
Ingredients:
For the Meatloaf:
2 pounds ground beef (80/20 or 85/15 for best results)
1/2 cup finely chopped onion
1/2 cup finely chopped bell pepper (red or green)
1 cup breadcrumbs (preferably seasoned)
1/2 cup milk
1/4 cup ketchup
1/4 cup barbecue sauce
2 large eggs
2 cloves garlic, minced
1 teaspoon salt
1/2 teaspoon black pepper
1/2 teaspoon dried thyme
1/2 teaspoon dried oregano
For the Glaze:
1/2 cup ketchup
1/4 cup brown sugar
1 tablespoon apple cider vinegar
Directions:
Preheat Oven:
Preheat your oven to 350°F (175°C).
Prepare Meatloaf Mixture:
In a large bowl, combine the ground beef, finely chopped onion, finely chopped bell pepper, breadcrumbs, milk, ketchup, barbecue sauce, eggs, minced garlic, salt, black pepper, dried thyme, and dried oregano.
Mix well until all ingredients are evenly distributed. Be careful not to overmix, as this can make the meatloaf dense.
Form and Bake:
Transfer the meat mixture to a baking sheet or a loaf pan and shape it into a loaf. If using a baking sheet, you can shape it into a loaf shape on the sheet.
Bake in the preheated oven for 1 hour, or until the internal temperature reaches 160°F (71°C) and the meatloaf is cooked through.
Prepare Glaze:
While the meatloaf is baking, prepare the glaze. In a small bowl, mix together the ketchup, brown sugar, and apple cider vinegar.
After the meatloaf has baked for 45 minutes, remove it from the oven and spread the glaze evenly over the top of the meatloaf.
Finish Baking:
Return the meatloaf to the oven and bake for an additional 15 minutes, or until the glaze is set and the meatloaf is cooked through.
Rest and Serve:
Remove the meatloaf from the oven and let it rest for 10 minutes before slicing. This helps the juices redistribute and makes for easier slicing.
