Cracker Barrel Meatloaf

Ingredients:
1 lb ground beef
1/2 lb ground pork
1 small onion, finely chopped
1 small bell pepper, finely chopped
2 cloves garlic, minced
1 cup breadcrumbs
1/2 cup milk
2 large eggs
1 cup ketchup
1/4 cup brown sugar
1 tablespoon Worcestershire sauce
1 teaspoon dried thyme
1 teaspoon dried basil
1/2 teaspoon paprika
Salt and black pepper, to taste
For the Topping:
1/2 cup ketchup
2 tablespoons brown sugar

Directions:
Preheat Oven:
Preheat your oven to 375°F (190°C).
Prepare the Meat Mixture:
In a large bowl, combine the ground beef and ground pork.
Add the finely chopped onion, bell pepper, and minced garlic.
Stir in the breadcrumbs, milk, and eggs until well combined.
In a separate small bowl, mix together 1 cup ketchup, 1/4 cup brown sugar, Worcestershire sauce, dried thyme, dried basil, paprika, salt, and pepper.
Pour this mixture into the meat mixture and mix thoroughly until everything is evenly incorporated.
Shape the Meatloaf:
Transfer the meat mixture to a loaf pan and shape into a loaf, or shape it into a loaf on a baking sheet if you prefer a crustier exterior.
Prepare the Topping:
In a small bowl, mix together 1/2 cup ketchup and 2 tablespoons brown sugar.
Spread the topping evenly over the meatloaf.
Bake the Meatloaf:
Bake in the preheated oven for 60-70 minutes, or until the internal temperature reaches 160°F (71°C) and the meatloaf is cooked through.
If the topping starts to brown too quickly, cover with aluminum foil and continue baking.
Rest and Serve:
Allow the meatloaf to rest for 10 minutes before slicing. This helps it hold together better when you cut it.
Serve with your favorite sides like mashed potatoes, green beans, or a simple salad.
