Cracked Out Chicken Tater Tot Casserole
Ingredients:
4 cups cooked chicken, shredded (rotisserie chicken works great)
1 (8-ounce) package cream cheese, softened
1 cup sour cream
1 packet (1 ounce) ranch seasoning mix
2 cups shredded cheddar cheese (divided)
1 cup cooked bacon, crumbled
1 (32-ounce) bag frozen tater tots
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
1/4 teaspoon black pepper
Fresh parsley, chopped (for garnish)
Instructions:
1. Preheat the Oven:
Preheat your oven to 350°F (175°C). Grease a 9×13-inch baking dish.
2. Mix the Filling:
In a large bowl, combine the softened cream cheese, sour cream, ranch seasoning, garlic powder, onion powder, and black pepper. Mix until smooth and creamy.
Stir in the shredded chicken, 1 1/2 cups of shredded cheddar cheese, and crumbled bacon.
3. Assemble the Casserole:
Spread the chicken mixture evenly into the prepared baking dish.
Top the mixture with a single layer of frozen tater tots.
4. Bake the Casserole:
Bake uncovered in the preheated oven for 35-40 minutes, or until the tater tots are golden brown and crispy.
5. Add Cheese:
Remove the casserole from the oven and sprinkle the remaining 1/2 cup of cheddar cheese over the top.
Return to the oven and bake for an additional 5 minutes, or until the cheese is melted.
6. Garnish and Serve:
Remove from the oven and let it cool slightly.
Garnish with fresh parsley for a pop of color and serve hot.
