Crack Potatoes

Ingredients:
4 large russet potatoes, peeled and cut into cubes
1 packet ranch seasoning mix
1 cup sour cream
8 oz cream cheese, softened
2 cups shredded cheddar cheese
1/2 cup cooked bacon bits (or crumbled bacon)
2 green onions, chopped (optional)
Salt and pepper to taste

Directions:
Place the cubed potatoes in a large pot and cover with water. Bring to a boil and cook for 10-15 minutes, or until tender. Drain the potatoes and set aside.
In a large bowl, combine the ranch seasoning mix, sour cream, cream cheese, and 1 1/2 cups of shredded cheddar cheese. Mix until smooth.
Add the cooked potatoes to the bowl and gently stir to coat with the cream cheese mixture.
Transfer the potato mixture to a greased 9×13-inch baking dish.
Top with the remaining 1/2 cup of cheddar cheese and crumbled bacon.
Bake at 350°F (175°C) for 25-30 minutes, or until the top is golden and bubbly.
Remove from the oven and sprinkle with chopped green onions if desired.
Serve hot and enjoy!
